The Greatest Breakfast Bar Recipe Ever

Get a huge bowl and mix together the following:
4 eggs
1.5 cups egg white
2 cups oats
1 cup edamame
1/2 diced broccolli
1 grated carrot
1 grated zuchini
1/2 green capsicum diced
handful pumpkin + sunflower seeds
1/2 cup chopped walnuts
3/4 cup soaked chia seeds
Grate in some ginger + turmeric
Pour into a lined baking tray, bake at 150 deg for around 45-55 mins (keep checking every 20 mins
I sprinkled some cacao nibs over the top halfway through the baking, which melted and pumped up my magnesium intake even further too.
Cool, slice, enjoy!
Yes, you can absolutely switch up the vegetables that are going in it - or add blueberries to make it a little sweeter.
Play around, trust your instincts, have fun using up leftover veg in the fridge, and remember you can buy the egg white as a pouch, to save yourself from cracking all those eggs and wasting the yolks (or feeling you need to bake more with them!)
